Lemon Curd Tarts

For a long time I have been coveting mini tart pans.  I would catch myself thinking….I could make _______. Fill in the blank.

If I only had some mini tart pans!

A couple of weeks ago I finally picked some up at World Market. I love World Market! I could walk around that store for hours and never see everything.

I’ve have been having so much fun coming up with recipes this past month using the Orange Curd I made. I decided to use the same recipe and make some lemon curd.

Although the recipe turned out as good as the orange curd  I didn’t like the flavor of the lemon curd as much as I did the orange curd. I think I’ll stick with the orange curd.


 You may see another recipe show up using the lemon curd though. I still have about a pint left to use up.


When I was thinking about making the lemon curd tarts I wanted to use a Lintzer torte crust but didn’t have enough almonds on hand. The days I have to bake and photograph for my blog are limited so instead of running to the store  for more almonds I went to the internet. 


I looked at many different tart crust recipes before settling on one that was shortbread like. That was the flavor I wanted for the crusts. The problem with that recipes is that it is too soft to roll out. I had to literally smear the dough into the tart pan. While I was making them I thought to myself never again. That said I am not going to share the recipe today. The flavor of the crust was shortbread like. I loved the flavor but it is really too much trouble. I’ll try to make some adjustments to the recipe and if it turns out well I will share it.


 Some of tart shells are filled with lemon curd. I then made a very thick lemon curd whipped topping using the this method and filled a few of the tart shells. The whipped topping was also used on some of the tarts that were filled with the lemon curd. Then a raspberries was added as garnish.


They tasted really good but like I mentioned earlier I prefer the orange curd to the lemon curd so next time that is what I will be using for a filling.



Time for a Change


For close to two years now I have been thinking about moving my blog over to WordPress. But Blogger has been good to me and I know this platform backwards and forwards. The thought of having to learn a new blog platform has kept me from making the move. 


At the end of last year I decided that if I wanted to take my blog to the next level a change was needed.


I went back and forth trying to decide if I should attempt the move myself or hire someone to do it for me. I went as far as contacting someone and inquiring on the cost and what was involved. Eventually I decided that I would take the plunge and try to make the move myself. I bought an ebook and  
decided that I might just be able to do it myself.


So far so good. I have set up a hosting account, set up a mirror site and installed WordPress. I am leaning toward buying  Genesis and a  Child Theme so I don’t have to worry about designing my new blog from scratch.


The scariest part is yet to come when I move my blog files from blogger to WordPress. Hopefully everything will go smoothly. If not you may be able to hear my scream where ever you might be. Wish me luck.


I am taking it slowly but I hope to make the complete move in the next couple of weeks.
