Since becoming a community leader in the Udi’s Gluten Free Community I have learned many things about how gluten can affect your body and mind.
There are many people who although they are not gluten intolerant or even have celiacs that have decided to eliminate or cut back on the amount of gluten in their diets.
And from what I have read people see an amazing difference in they way they feel.

It's been nearly a year since my doctor changed my diet to vegan and I'm happy to report that I've not been in the hospital since. As an omnivore, I was in and out about every 3 months with twisted bowels. I didn't think vegan would do any good, but I wanted to tell the doc that I gave it an honest try. Imagine my surprise when within the first three months I'd dropped 45 lbs and gained the skin of a 40 year old, even though I am past 70. No changes planned for 2012. I'm not messing with a good thing.
